Except clarifying shampoos, most shampoos contain some conditioning agents such as humectants, silicone and protein. These stay on your hair until the next time you wash it although they are in much lower amounts than in conditioner.

Ammonium lauryl sulfate is just as harsh as SLS and TEA-lauryl sulfate. In water, these ingredients are pretty much the same. For a less harsh formula try to find a surfactant like PEG-80 Sorbitan Laurate or Cocamidopropyl Betaine.
